Purple corn is a high-fiber food that has been grown in Peru for thousands of years. Its kernels have long been used by Andean people to color foods and beverages and improve circulation. It has a ton of vitamins (B5, B9) & minerals (zinc, copper, manganese, magnesium &potassium).

According to a study by Monica Giusti, an assistant professor of food science at Ohio State University USA, purple corn has been proved to be the winner in anthocyanin content among most plant based foods and with most benefits to human cells.

The most abundant anthocyanin found in purple corn is called C3G. Purple corn has 2.94 times higher anthocyanin content than wild blueberry, also 5.13times > Acai berry; 8.21 times > blood orange; 10.39 times > purple sweet potato.
Its rich antioxidants kill free radicals that cause cell damage and helps anti-aging. C3G has tested to be at least 40 times more effective than vitamin E for the prevention of damage caused by UV light. Vitamin E is a weaker inhibitor of UVB-induced lipid oxidation because it rapidly breaks down under UV light, C3G does not break down, so it is more effective.

Not only is purple corn is a high-fiber food, but its C3G also helps control obesity. Researchers in Japan compared the bodyweights of male mice fed a high-fat diet with another group fed the same high-fat diet but with the addition of purple corn (which provided C3G at 0.2%). After 12 weeks, fatty tissue in the high-fat diet group was found to be growing in size but showed no increase in the group that included purple corn in their diet.
